- 4 large russet taters, scrubbed
- 8 bacon slices
- 4 tablespoons of unsalted Challenge Butter
- 2 garlic clove cloves, minced
- 1/4 cup chopped yellow onion
- 1/3 cup all-purpose flour
- 2 cup s low-fat milk
- 1 cup half and half
- 2 cup s chicken stock
- 1 teaspoon kosher salt, plus much more to taste
- 1/2 teaspoon garlic clove salt, plus much more to taste
- 1/2 teaspoon pepper
- 1 cup shredded mild cheddar cheese
- 1 cup shredded sharp cheddar cheese
- 1 cup sour cream
- Minced fresh chives, for garnish
- Pierce the taters multiple occasions having a fork, then microwave them for 12 to fifteen minutes, or until tender.* Carefully halve the taters and let awesome. Once awesome enough to deal with, take away the skins, and reduce chunks.

- If you’d prefer to use cheeses and bacon like a garnish, reserve 1/4 cup of t each. Stir within the remaining cheeses, remaining bacon, and also the sour cream. Take away the pot in the heat.
