Method

Heat 1 tablespoons of essential olive oil inside a large fry pan or wok. Add 1 chopped onion and soften for five mins.

Stir in 1 teaspoon hot smoked paprika, 1 teaspoon dried thyme and 300g paella or risotto grain, stir for 1 min, then splash in 3 tablespoons of sherry or white-colored wine, if using.

Once it’s evaporated, stir inside a 400g can of chopped tomato plants with garlic clove and 900ml chicken stock.

Season and prepare, uncovered, for around 15 mins, stirring once in a while until grain is nearly tender but still encircled with a few liquid.

Stir 400g frozen sea food mix in to the pan and canopy having a lid. Simmer for five mins, or before the sea food is cooked through and also the grain is tender.

Squeeze within the juice of lemon, scatter with a number of flat-leaf parsley and serve with wedges in the remaining lemon.
